Chocolate Chip Cookies

Chocolate Chip Cookies

  • 1.5 cups of rolled oats. Either leave them whole or throw them in your blender for a finer texture.
  • 1 cup almond meal or for a finer texture almond flour
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter (I use 1/2 cup coconut oil to make them dairy free)
  • 1/2 cup natural sweetener, rice syrup, maple syrup or honey, or a combination of these for a nice blended sweet taste. I like a blend of rice syrup and maple syrup for a gentle yet flavorful sweet taste
  • 1 teaspoon vanilla
  • 1/2 cup chopped walnuts
  • 1/3 cup grain sweetened chocolate chips
  • 1/3 cup raisins
  • 1/4 cup hemp seeds
  • Grated orange rind (optional – but very lovely!)
  • Egg  (optional for extra protein, it also makes them a bit dryer/crunchier)

  1. Mix oats, almond meal, salt, baking soda

  2. Mix wet ingredients

  3. Mix together, then add the chips, nuts & raisins.

  4. Lay on parchment paper and bake for 20 minutes at 350
