How to Roast a Whole Winter Squash

This method is often much easier than trying to cut through the tough skin of a winter squash.

  1. Preheat the oven to 400°F.
  2. Place whole squash on a baking sheet and roast until the skin is papery and a fork inserted into 2 or 3 different spots reveals very tender flesh, about 1 hour.
  3. Set aside until cool enough to handle.
  4. Peel the skin off, cut in half and scoop out the seeds.
