Summer Fried Rice

Ingredients

  • matchstick pieces of summer squash
  • leftover brown rice
  • 1 egg, beaten
  • a handful of sliced scallions
  • tamari or fish sauce
  • some chopped basil

Instructions

  1. Saute the summer squash in coconut oil.
  2. Mix in leftover rice
  3. Add egg and scallions
  4. Splash with tamari or fish sauce and sprinkle with chopped basil
