Roasted Cauliflower, Zucchini and Carrots

Ingredients

  • 1 head cauliflower
  • 1 medium zucchini
  • 6 carrots
  • 2 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/2 tsp pepper
  • 5 sprigs fresh rosemary

Instructions

  1. Chop cauliflower into florets
  2. Chop zucchini into 1/2-inch slices
  3. Chop carrots into 1/2-inch slices, on the diagonal
  4. Place vegetables in a large bowl, toss with oil, salt and pepper
  5. Transfer vegetables to a large baking sheet
  6. Roast at 350 for 30 minutes
  7. Stir vegetables and scatter rosemary sprigs over top
  8. Bake for 10 more minutes
