Asparagus – Two Simple Recipes

How to store asparagus:

Asparagus is best cooked right away but it can be stored in your fridge for up to 5 days. Either wrap the bottom of stalks in a damp paper towel, place in a paper bag and store in the crisper, or stand the stalks in an inch of water.

Roasted Asparagus

  1. Preheat oven to 400 degrees
  2. Place asparagus spears on a baking sheet
  3. Drizzle with extra virgin olive oil, and season with salt and pepper
  4. Roast, turning occasionally, until lightly browned, about 18-20 minutes
  5. Drizzle balsamic vinegar over before serving

Asparagus and Carrot Slaw

  • 3 grated carrots
  • 1 1/2 lbs grated asparagus
  • 1/3 cup fresh mint
  • 1/3 cup sliced red onions
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp salt

Toss all the ingredients together.
