½ cup chocolate chips -optional (My favorite chips are Sunspire grain sweetened or Lily’s Stevia Sweetened. I like these because they don’t use refined sugar and they keep blood sugar levels low and steady – no sugar roller-coaster)
½ cup shredded coconut
Place apricots and pecans in a food processor and pulse until the texture of coarse gravel.
Pulse in eggs, salt and vanilla, until mixture forms a ball.
Remove mixture from food processor and work in coconut and chocolate chips, if using.
Place mixture in a greased 8 x 8 inch baking dish.
